Taco Breakfast Casserole

The casserole is perfect for when you have some leftover ground turkey, but if you don’t, simply cook a little up so that you can enjoy this scrumptious egg dish! Extra creamy and fluffy from sour cream and with just enough heat from prepared salsa, this dish will surely satisfy your body’s need for healthy fats and protein!

Prep Time: 10 minutes
Cooking Time: 20 minutes


1 tablespoon butter or ghee
4 large eggs
4 ounces cooked ground turkey
1/3 cup tablespoons sour cream
¼ cup jarred salsa
2 whole scallions, minced
1 teaspoon sea salt


Preheat oven to 350 degrees Fahrenheit.

Grease an 8x8” baking dish with butter or ghee.

Mix all remaining ingredients together in a bowl.

Pour into baking dish.

Bake for 20 minutes and allow to cool a few minutes before serving with optional sour cream and salsa.
