Tahini Cake Batter Blondies

½ cup (1 stick) of butter 

4 large eggs 

½ cup tahini

¾ cup monk fruit keto sweetener 

¼ teaspoon sea salt

2 teaspoons pure vanilla extract

1 teaspoon baking powder

2 tablespoons coconut flour

Preheat your oven to 320 F (160 C).

Place the butter in a small saucepan on the stove set to low heat. Bring it to a simmer for about 10 minutes, letting it brown.

While it is simmering, mix the remaining ingredients, beginning with the eggs and adding ingredients in order, until it is very creamy. 

Add the browned butter to the batter and mix very well. Pour into a 7x11” baking pan lined with parchment paper. Use a baker’s spatula to smooth the batter, then add sprinkles to the batter.

Bake for 20 minutes, or until a toothpick pierced in its center comes out clean. 

Remove from the oven and allow to cool for a few minutes before slicing into 12 squares. 

Store in an airtight container for up to 5 days.
