This decadent duo is a great switch up for a classic take out dish! Serve this savory shrimp over a bed of tender cauliflower rice, with a garnish of walnuts and scallions!!

Cooking Time: 10 minutes
Ingredients:
1 tablespoon coconut oil
1 garlic clove, minced
1 pound of shrimp, peeled and deveined
1 teaspoon of sea salt
½ teaspoon black pepper
2 tablespoons mayonnaise
Juice from ½ lime
4 cups cauliflower rice
¼ cup chopped walnuts for garnishing
Scallion for garnishing
Sesame seeds for garnishing
Instructions:
Add coconut oil to a skillet and heat to medium. Add minced garlic and shrimp and allow shrimp to sear, about 2 minutes per side.
Add sea salt, black pepper, mayonnaise and lime juice to a bowl and mix well. Add cooked shrimp and garlic to the bowl and toss to coat the shrimp.
Add cauliflower rice to the skillet and heat on medium heat until it is soft, about 5 minutes.
Serve shrimp over cauliflower rice and garnish with walnuts, scallion, and sesame seeds.
