These zucchini and broccoli fritters are perfect to fry up for your next appetizer and serve with your favorite Keto-friendly dipping sauce. We mixed some mayonnaise and mustard together, let us know how you serve up these tasty treats!

Ingredients:
1 medium zucchini, shredded
1 cup broccoli florets, steamed
1 whole scallion, minced
1 large egg
2 tablespoons coconut flour
1 tablespoon arrowroot powder
1 teaspoon sea salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon cumin powder
2 tablespoons ghee or butter
Instructions:
Steam broccoli until tender, about 5 minutes.
While broccoli is steaming, place shredded zucchini in a colander and squeeze out its water with your hands.
Mix all ingredients except ghee or butter together until well combined.
Heat a skillet up to medium heat with ghee or butter.
Form 6 patties with your hands and place in the hot skillet.
Allow to sear in the skillet until browned, about 3 minutes per side.
Remove from the heat and serve with your favorite Keto-friendly sauce, such as mayonnaise and mustard, storing any leftovers in the fridge for up to 5 days.
